4 boneless, skinless chicken breasts

1 cup fresh basil pesto (store-bought or homemade)

1 cup fresh mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: Pat dry the chicken breasts with a paper towel. Season both sides with salt and pepper.

      Sear the Chicken (optional): In a large oven-safe skillet, heat the olive oil over medium heat. Add the chicken breasts and sear for about 3-4 minutes on each side until golden brown. If you don't have an oven-safe skillet, you can skip this step and place the raw chicken directly in a baking dish.

        Add Pesto: Spread a generous layer of basil pesto over each chicken breast, ensuring they are evenly coated.

          Add Cheeses and Tomatoes: Sprinkle the shredded mozzarella and grated Parmesan cheese over the top of each chicken breast. Distribute the halved cherry tomatoes around the chicken, nestling them among the breasts.

            Bake: Transfer the skillet (or baking dish) to the preheated oven and bake for 25-30 minutes or until the chicken is cooked through and the internal temperature reaches 165°F (75°C). The cheese should be melted and bubbly.

              Garnish and Serve: Remove the chicken from the oven and let it rest for a few minutes. Garnish with fresh basil leaves before serving.
