Ingredients

1 lb boneless, skinless chicken breasts, thinly sliced

2 tablespoons vegetable oil

2 cups mixed vegetables (bell peppers, broccoli, and snap peas)

3 cloves garlic, minced

1 inch fresh ginger, grated

1/4 cup soy sauce (low sodium)

1/4 cup teriyaki sauce

1 tablespoon honey (or brown sugar)

1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Cooked jasmine rice or noodles, for serving

Instructions

Prepare the Sauce: In a small bowl, mix together soy sauce, teriyaki sauce, honey, and grated ginger. Set aside.

Heat the Oil: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until hot.

Cook the Chicken: Add the sliced chicken to the hot oil in the skillet. Cook until the chicken is browned and cooked through, about 5-7 minutes. Stir often to ensure even cooking.

Add Garlic and Veggies: Add minced garlic and mixed vegetables to the skillet. Stir-fry for another 3-4 minutes until the veggies are tender-crisp.

Stir in the Sauce: Pour the prepared sauce over the chicken and vegetable mixture. Stir to coat everything evenly.

Thicken the Sauce: Add the cornstarch mixed with water to the mixture, stirring constantly. Cook for an additional 1-2 minutes until the sauce thickens slightly.

Serve: Remove from heat and garnish with chopped green onions and sesame seeds. Serve hot over cooked jasmine rice or noodles.
