1 pound ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning (or homemade blend)

1/4 cup black beans, rinsed and drained

1/4 cup corn (fresh or frozen)

1/2 cup shredded cheese (cheddar or Mexican blend)

12 small flour tortillas

1/2 cup salsa

Fresh cilantro, chopped (for garnish)

Sour cream (optional for serving)

Lime wedges (optional for serving)

Instructions
 

Cook the Chicken: Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté for about 2-3 minutes until soft. Stir in the minced garlic and cook for another minute. Add the ground chicken and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.

    Season the Mixture: Once the chicken is cooked, add the taco seasoning, black beans, and corn. Stir well to combine and allow to cook for another 2-3 minutes until heated through. Remove from heat and stir in the shredded cheese until melted and well incorporated.

      Prepare the Tortillas: Cut each flour tortilla into quarters to create small triangles. You should have about 48 pieces. Lay them on a clean surface and spoon a generous amount of the chicken filling onto the center of each triangle.

        Fold the Tortillas: Carefully fold the tortilla over the filling to create a pocket. Use a toothpick to secure the pocket if necessary, ensuring the filling remains intact.

          Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for approximately 3-5 minutes.

            Air Fry the Bites: Lightly spray the air fryer basket with non-stick cooking spray. Place the taco bites in a single layer, making sure they are not overcrowded (you may need to work in batches). Lightly spray the tops with cooking spray for added crispiness.

              Cooking Time: Air fry the taco bites for about 6-8 minutes, flipping halfway through, until golden brown and crispy.

                Serve: Once cooked, remove the taco bites from the air fryer. Arrange them on a serving platter and drizzle with salsa. Garnish with freshly chopped cilantro and serve with sour cream and lime wedges on the side.
