1 medium zucchini (grated and excess moisture squeezed out)

1 pound ground turkey

1/2 cup grated Parmesan cheese

1 large egg

1 cup breadcrumbs (preferably whole wheat or gluten-free)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

Cooking spray or olive oil for greasing

Optional: Marinara sauce for dipping

Prepare the Zucchini: Grate the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth and wring out the excess moisture. This step is crucial for preventing sogginess in the poppers.

    Mix the Ingredients: In a large mixing bowl, combine the ground turkey, grated zucchini, Parmesan cheese, egg, breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until everything is well combined.

      Form the Poppers: Using your hands, scoop out a tablespoon of the mixture and form it into small, bite-sized balls or patties. Place them on a plate lined with parchment paper.

        Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 3-5 minutes.

          Spray & Arrange the Poppers: Lightly spray the basket of the air fryer with cooking spray or drizzle with olive oil. Carefully arrange the turkey zucchini poppers in a single layer, making sure they are not touching. You may need to work in batches depending on the size of your air fryer.

            Cook the Poppers: Air fry the poppers at 400°F (200°C) for 10-12 minutes, flipping halfway through. The poppers should be golden brown and cooked through (internal temperature should reach 165°F or 74°C).

              Serve: Once cooked, remove the poppers from the air fryer and let them cool slightly. Serve warm with marinara sauce for dipping, if desired.
