Air Fryer Veggie Quesadilla Triangles

4 large flour tortillas

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1 cup bell peppers, thinly sliced (red, yellow, and green)

1 cup zucchini, finely chopped

1 small red onion, thinly sliced

1 cup spinach leaves (fresh or thawed if frozen)

1 teaspoon olive oil

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Salsa and sour cream for serving (optional)

Instructions
 

Prepare the Filling:

    In a large mixing bowl, combine the sliced bell peppers, chopped zucchini, red onion, and spinach. Drizzle with olive oil, then sprinkle the garlic powder, cumin, smoked paprika, salt, and pepper over the vegetables. Toss until everything is evenly coated.

      Assemble the Quesadillas:

        Lay one flour tortilla flat on a clean surface. Sprinkle half of the shredded cheese evenly over one half of the tortilla. Layer a generous portion of the prepared veggie mixture on top of the cheese, then add another layer of cheese on top of the veggies. Fold the tortilla in half to create a half-moon shape.

          Repeat:

            Repeat the process for the remaining tortillas, making a total of 4 quesadillas.

              Preheat the Air Fryer:

                Preheat your air fryer to 375°F (190°C) for about 5 minutes.

                  Air Fry the Quesadillas:

                    Place 2 quesadillas in the air fryer basket (or as many as fit comfortably without overlapping). Air fry for about 6-8 minutes, flipping halfway through, until they are golden brown and crispy. The cheese should be melted and oozing.

                      Slice Into Triangles:

                        Once cooked, carefully remove the quesadillas from the air fryer and let them cool for a minute. Using a sharp knife or pizza cutter, slice each quesadilla into triangles.

                          Serve:

                            Serve the crispy veggie quesadilla triangles warm, accompanied by salsa and sour cream for dipping, if desired.
