Ingredients

1 cup rolled oats

1/2 cup almond butter (creamy or crunchy, based on preference)

1/4 cup honey or maple syrup

1/4 cup mini chocolate chips (dark or semi-sweet)

1/4 cup chopped almonds (or any nuts of your choice)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

A pinch of sea salt

Instructions

Mix Dry Ingredients: In a large bowl, combine the rolled oats, chopped almonds, mini chocolate chips, cinnamon, and sea salt. Stir well to ensure they are evenly distributed.

Combine Wet Ingredients: In a separate bowl, combine the almond butter, honey (or maple syrup), and vanilla extract. Stir until the mixture is smooth and well blended.

Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Mix thoroughly with a spatula or your hands until all ingredients are fully incorporated. The mixture should be sticky but hold together.

Chill for Easy Handling: Cover the bowl with plastic wrap and refrigerate the mixture for about 30 minutes. This helps it firm up, making it easier to roll into balls.

Roll into Balls: Once chilled, scoop out small portions of the mixture (about 1 tablespoon each) and roll them into balls using your hands. Place them on a baking sheet lined with parchment paper.

Optional Coating: If desired, you can roll the energy balls in extra chopped nuts or shredded coconut for added texture.

Store: Store the energy balls in an airtight container in the refrigerator for up to a week, or in the freezer for up to a month.

Prep Time, Total Time, Servings: 10 minutes | 40 minutes with chilling time | Makes about 15-20 balls
