2 large apples, peeled, cored, and diced

1 cup rolled oats

1 cup all-purpose flour

1/2 cup packed brown sugar

1/2 cup unsalted butter, melted

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/2 teaspoon vanilla extract

1/2 cup chopped walnuts (optional)

1 tablespoon lemon juice

1 tablespoon sugar (for apple mixture)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish or line it with parchment paper for easy removal.

    Prepare the Apples: In a medium bowl, combine the diced apples with lemon juice and the tablespoon of sugar. Toss well and set aside to let the apples macerate while you prepare the crumble mixture.

      Make the Crumble Base: In a large bowl, mix together the rolled oats, flour, brown sugar, ground cinnamon, nutmeg, and salt. Pour in the melted butter and vanilla extract. Stir until the mixture resembles coarse crumbs.

        Assemble the Bars: Press half of the crumble mixture firmly into the bottom of the prepared baking dish to form a base layer. Next, spread the apple mixture evenly over the crumble base, ensuring the apples are evenly distributed. Finally, sprinkle the remaining crumble mixture over the apples, followed by chopped walnuts if using.

          Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the tops are golden brown and the apples are tender.

            Cool and Slice: Remove the dish from the oven and allow it to cool in the pan for at least 10-15 minutes. Once cool, slice into bars and serve warm or at room temperature.

              Storage: Store any leftovers in an airtight container at room temperature for up to three days, or refrigerate for a week. These bars also freeze well for up to a month!
