2 cups rolled oats

1 cup unsweetened applesauce

1/2 cup almond butter or peanut butter

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup diced fresh apples (about 2 medium apples)

1/2 cup chopped walnuts or pecans (optional)

1/4 cup raisins or dried cranberries (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, ground cinnamon, baking soda, and salt. Stir well to ensure the baking soda and salt are evenly distributed.

      Combine Wet Ingredients: In another bowl, mix together the applesauce, almond butter, honey (or maple syrup), and vanilla extract until smooth and well incorporated.

        Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Stir until just combined, making sure the oats are thoroughly coated. Fold in the diced apples and, if using, the chopped walnuts and raisins.

          Prepare to Bake: Transfer the mixture to the lined baking dish. Spread it out evenly and press it down firmly into the corners to ensure even baking.

            Bake the Bars: Bake in the preheated oven for about 25-30 minutes or until the edges start to turn a golden brown and the center is set.
