Instructions

Prepare the Crust: Preheat your oven to 325°F (160°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan, creating an even layer. Bake for 10 minutes, then remove from the oven and let cool.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and continue to mix until well combined. Add the vanilla extract, and then beat in the eggs one at a time, mixing well after each addition. Mix in the sour cream and ground cinnamon until the mixture is smooth and creamy.

Prepare the Apple Layer: In a separate bowl, toss the sliced apples with the brown sugar, ground cinnamon, and lemon juice until evenly coated.

Assemble the Cheesecake: Pour half of the cheesecake filling over the cooled crust, spreading it evenly. Layer the apple mixture over the filling, then pour the remaining cheesecake filling on top, smoothing it out.

Make the Crisp Topping: In a medium bowl, combine rolled oats, flour, brown sugar, and ground cinnamon. Drizzle the melted butter over the dry ingredients and mix until crumbly. Sprinkle this mixture evenly over the top of the cheesecake.

Bake: Carefully place the cheesecake in the preheated oven. Bake for about 55-65 minutes or until the center is set but still slightly jiggles (it will firm up as it cools). The topping should be golden brown.

Cool and Chill: Once baked, turn off the oven and crack the oven door, allowing the cheesecake to cool gradually for about an hour. Refrigerate for at least 4 hours, preferably overnight, to set fully.

Serve: Remove the cheesecake from the springform pan, slice, and serve chilled. Enjoy the warm apple crisp flavors blended with creamy cheesecake!
