1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

¼ teaspoon salt

For the cheesecake filling:

3 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

2 cups apples, peeled and diced (about 2 medium-sized apples)

1 teaspoon ground cinnamon

¼ teaspoon nutmeg

1 tablespoon lemon juice

For the apple topping:

2 cups apples, peeled and sliced (about 2 medium-sized apples)

2 tablespoons brown sugar

1 teaspoon ground cinnamon

1 tablespoon lemon juice

For the crisp topping:

¾ cup old-fashioned oats

½ cup all-purpose flour

½ cup brown sugar

¼ cup granulated sugar

½ teaspoon ground cinnamon

½ cup cold unsalted butter, cubed

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C).

    Make the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, sugar, and salt. Stir until the mixture resembles wet sand. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes until set and slightly golden, then remove from oven and let it cool.

      Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth. Add in granulated sugar and vanilla extract, continuing to beat until light and fluffy. Add eggs one at a time, mixing well after each addition. Gently fold in sour cream, diced apples, cinnamon, nutmeg, and lemon juice until well combined.

        Bake the Cheesecake: Pour the cheesecake filling over the cooled crust in the springform pan. Bake for about 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour to prevent cracking.
