6 slices of thick white or brioche bread

2 medium-sized apples, peeled and diced (preferably Granny Smith or Honeycrisp)

1/2 cup pecans, chopped

4 large eggs

1 cup milk (or almond milk for a dairy-free option)

2 tablespoons vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 cup maple syrup (plus extra for serving)

1 tablespoon brown sugar

1 tablespoon butter (for greasing)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a muffin tray with butter or non-stick spray to prevent sticking.

    Prepare the Bread: Cut the bread into small cubes (about 1-inch pieces). You can leave the crusts on for added texture or trim them off if you prefer a softer bite.

      Make the Apple-Pecan Filling: In a medium bowl, mix the diced apples, chopped pecans, brown sugar, and 1/2 teaspoon of cinnamon. Set aside to let the flavors meld.

        Prepare the French Toast Mixture: In a large bowl, whisk together the eggs, milk, vanilla extract, remaining cinnamon, nutmeg, and a pinch of salt until well combined.
