Ingredients

2 cups all-purpose flour

1/2 cup granulated sugar

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/4 cup cold unsalted butter, cubed

1 cup diced apples (peeled and cored, preferably Granny Smith)

1/2 tsp cinnamon

1/4 tsp nutmeg (optional)

3/4 cup heavy cream

1 tsp vanilla extract

1 egg (for egg wash)

Extra sugar for Sprinkle on top

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg (if using).

Cut in the Butter: Add the cold, cubed butter into the flour mixture. Using a pastry cutter or your fingers, blend until the mixture resembles coarse crumbs.

Add Apples: Gently fold in the diced apples until they are evenly coated with the flour mixture.

Mix Wet Ingredients: In a separate bowl, combine the heavy cream and vanilla extract.

Combine Mixtures: Make a well in the center of the dry mixture and pour in the cream mixture. Stir gently until just combined; be careful not to overmix.

Shape Dough: Turn the dough out onto a flour-dusted surface. Knead it gently just a few times until it comes together. Pat it into a 1-inch thick circle.

Cut the Scones: Using a sharp knife or a pastry cutter, cut the dough into 8 triangles or use a round cutter for circular scones.

Prepare for Baking: Place the scones onto the prepared baking sheet. Beat the egg and brush it lightly over the tops of the scones. Sprinkle with a little extra sugar for a sweet crust.

Bake: Bake in the preheated oven for 15-20 minutes or until the scones are golden brown and cooked through.

Cool & Serve: Remove from the oven and let cool on a wire rack for a few minutes. Serve warm with butter or your favorite jam.
