2 ½ cups all-purpose flour

1 tbsp granulated sugar

1 tsp salt

1 cup unsalted butter, chilled and cubed

6-8 tbsp ice water

For the Apple Filling:

6-8 medium apples (such as Granny Smith, Honeycrisp, or a mix), peeled, cored, and sliced

¾ cup brown sugar, packed

¼ cup granulated sugar

2 tbsp all-purpose flour

1 tsp cinnamon

½ tsp nutmeg (optional)

1 tbsp lemon juice

1 tsp vanilla extract

For Assembly:

1 egg, beaten (for egg wash)

1 tbsp milk (for egg wash)

Prepare the Flaky Crust:

    In a large mixing bowl, whisk together the flour, sugar, and salt. Add the cubed butter and use a pastry cutter or your fingertips to mix until the mixture resembles coarse crumbs. Gradually stir in the ice water, one tablespoon at a time, until the dough just comes together. Divide the dough into two equal balls, flatten into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

      Make the Apple Filling:

        In a large bowl, combine the sliced apples, brown sugar, granulated sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract. Toss well to ensure the apples are evenly coated. Let the mixture sit for about 15-20 minutes to allow the flavors to meld.

          Roll Out the Crust:

            Preheat your oven to 425°F (220°C). On a lightly floured surface, roll out one dough disk into a 12-inch circle, about ⅛ inch thick. Place the rolled dough into a 9-inch pie dish, allowing the excess to hang over the edges.

              Fill the Pie:

                Pour the apple filling into the pie crust, ensuring it’s evenly spread. Roll out the second dough disk and cut it into strips for a lattice top or roll it out whole to place on top. If using a whole top, cut slits for steam to escape.
