For the Dough:

4 cups all-purpose flour

1/2 cup granulated sugar

1 teaspoon salt

2 1/4 teaspoons (1 packet) instant yeast

1/2 teaspoon ground cardamom

1/2 teaspoon ground cinnamon

1 cup warm milk (110°F/43°C)

1/2 cup unsalted butter, melted

2 large eggs

For the Filling:

1/2 cup brown sugar, packed

2 tablespoons ground cinnamon

1 teaspoon ground cardamom

1/4 cup unsalted butter, softened

For the Glaze:

1 cup powdered sugar

2 tablespoons milk

1 teaspoon vanilla extract

Instructions
 

Prepare the Dough:

    In a large mixing bowl, combine the flour, sugar, salt, instant yeast, ground cardamom, and ground cinnamon. Mix well to combine all the dry ingredients.

      Mix Wet Ingredients:

        In a separate bowl, whisk together the warm milk, melted butter, and eggs until well-blended.

          Combine and Knead:

            Gradually pour the wet mixture into the dry ingredients, stirring until a soft dough forms. Turn the dough out onto a floured surface and knead for about 8-10 minutes or until smooth and elastic. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1 to 1.5 hours or until doubled in size.

              Prepare the Filling:

                In a small bowl, mix together the brown sugar, ground cinnamon, and ground cardamom. Set aside.

                  Roll Out the Dough:

                    Once the dough has risen, punch it down and turn it out onto a lightly floured surface. Roll the dough into a rectangle approximately 1/4 inch thick.

                      Add the Filling:

                        Spread the softened butter over the rolled-out dough, then sprinkle the cinnamon-sugar-cardamom mixture evenly across the surface.

                          Form the Rolls:

                            Starting from one long side, roll the dough tightly into a log. Pinch the seams to seal. Use a sharp knife or dental floss to slice the log into 12 equal rolls.

                              Second Rise:

                                Place the rolls in a greased 9x13-inch baking dish (or two round cake pans), making sure they are slightly touching. Cover the dish with a towel and let them rise for another 30-45 minutes until they are puffy.

                                  Bake:

                                    Preheat your oven to 350°F (175°C). Once the rolls have risen, bake them in the preheated oven for 25-30 minutes or until golden brown and cooked through.

                                      Prepare the Glaze:

                                        In a small bowl, combine the powdered sugar, milk, and vanilla extract. Whisk until smooth to create a glaze.

                                          Glaze the Rolls:

                                            Once the rolls are baked, remove them from the oven and let them cool for about 5 minutes. Drizzle the glaze over the warm rolls before serving.
