For the Dough:

4 cups all-purpose flour

1/4 cup granulated sugar

1 packet (2 1/4 tsp) active dry yeast

1/2 tsp salt

1 cup milk, warmed to 110°F

1/4 cup unsalted butter, melted

2 large eggs, room temperature

For the Filling:

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

2 tbsp ground cinnamon

1 tbsp ground cardamom

1/4 tsp ground nutmeg (optional)

1/4 tsp salt

For the Glaze:

1 cup powdered sugar

2-3 tbsp milk

1/2 tsp vanilla extract

A sprinkle of ground cardamom for garnish

Instructions
 

Prepare the Dough:

    - In a large mixing bowl, combine the warm milk, granulated sugar, and active dry yeast. Let it sit for about 5-7 minutes until it becomes frothy.

      - Add the melted butter and eggs to the mixture, stirring well to combine.

        - Gradually add the flour and salt, mixing until a dough starts to form. Knead the dough on a lightly floured surface for about 5-7 minutes, until it becomes smooth and elastic.

          Let the Dough Rise:

            - Place the kneaded dough into a greased bowl, cover it with a kitchen towel or plastic wrap, and allow it to rise in a warm place for about 1-1.5 hours or until it doubles in size.

              Prepare the Filling:

                - While the dough is rising, mix together the softened butter, brown sugar, ground cinnamon, cardamom, nutmeg (if using), and salt in a bowl until well blended.

                  Assemble the Rolls:

                    - Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle, approximately 16x12 inches.

                      - Spread the filling evenly over the surface of the dough, leaving a small border around the edges.

                        - Starting from one of the long edges, tightly roll the dough into a log shape.

                          Cut the Rolls:

                            - Cut the rolled dough into 12 equal pieces, about 1 to 1.5 inches thick. Place the rolls cut-side up in a greased 9x13 inch baking dish.

                              Second Rise:

                                  Bake:

                                    - Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes or until they are golden brown and cooked through.

                                        - In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency by adding more milk or powdered sugar as needed.

                                          Glaze the Rolls:

                                            - Once the rolls are out of the oven, let them cool slightly before drizzling the glaze over the top. Sprinkle a little ground cardamom on top for an aromatic finish.
