Asian Noodle Salad with Peanut Dressing

For the Salad:

8 oz rice noodles

1 cup shredded carrots

1 cup cucumber, julienned

1 red bell pepper, thinly sliced

1 cup red cabbage, shredded

1 cup edamame, shelled

1/4 cup green onions, sliced

1/4 cup chopped fresh cilantro

1/4 cup toasted sesame seeds

For the Peanut Dressing:

1/4 cup creamy peanut butter

2 tablespoons soy sauce

1 tablespoon honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon sesame oil

1-2 teaspoons chili paste (adjust based on spice preference)

2-3 tablespoons warm water (to reach desired consistency)

Instructions
 

Prepare the Rice Noodles:

    - Bring a large pot of water to a boil. Remove from heat and add the rice noodles. Let them soak for about 8-10 minutes or until tender. Drain and rinse with cold water to stop the cooking process. Set aside.

      Chop the Vegetables:

        - While the noodles are soaking, prepare the salad ingredients. Julienne the cucumber, thinly slice the red bell pepper, and shred the carrots and red cabbage. Place all the veggies in a large mixing bowl.

          Make the Peanut Dressing:

            - In a medium bowl, combine the creamy peanut butter, soy sauce, honey or maple syrup, rice vinegar, sesame oil, and chili paste. Mix well. Gradually add warm water, one tablespoon at a time, until the dressing reaches your desired consistency (smooth and pourable).

              Combine the Salad:
