2 cups cooked chicken breast, shredded or diced

1 ripe avocado, mashed

1/4 cup Greek yogurt (or mayonnaise for a richer flavor)

1 tablespoon lime juice (freshly squeezed)

1/4 cup red onion, finely diced

1/2 cup cherry tomatoes, halved

1/4 cup cilantro, chopped

1/2 teaspoon garlic powder

Salt and black pepper, to taste

Lettuce leaves (for serving, optional)

Instructions
 

Prepare the Chicken: If you haven't already, cook the chicken breast by boiling, baking, or grilling until fully cooked. Allow it to cool before shredding or dicing it into bite-sized pieces.

    Make the Avocado Base: In a mixing bowl, mash the ripe avocado until creamy. Add the Greek yogurt and lime juice, mixing until well combined. This will create a smooth base for the salad.

      Combine Ingredients: To the avocado mixture, add the shredded chicken, diced red onion, halved cherry tomatoes, and chopped cilantro. Sprinkle in the garlic powder, and season with salt and black pepper to taste.
