1 tablespoon olive oil (for cooking eggs)

Fresh herbs for garnish (such as cilantro or parsley)

Optional toppings: sliced radishes, chili oil, hemp seeds, or feta cheese for added flavor

Prepare the Avocado Spread: In a medium bowl, scoop the flesh of the ripe avocados and mash them with a fork.
