Avocado Toast with Spicy Chickpeas

1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon cumin

¼ teaspoon cayenne pepper (adjust for spice preference)

Salt and pepper to taste

2 large ripe avocados

2 tablespoons fresh lemon juice

4 slices of whole-grain or sourdough bread

½ teaspoon red pepper flakes (optional, for garnish)

Fresh cilantro or parsley, chopped (for garnish)

Optional toppings: cherry tomatoes, radishes, or a drizzle of balsamic glaze

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chickpeas: On a baking sheet, spread the drained chickpeas in a single layer. Drizzle them with olive oil, and sprinkle the smoked paprika, garlic powder, cumin, cayenne pepper, salt, and pepper. Toss to coat evenly.

      Roast the Chickpeas: Roast the chickpeas in the preheated oven for 25-30 minutes, or until golden and crispy. Shake the pan halfway through cooking to ensure even roasting.

        Prepare the Avocado: While the chickpeas are roasting, halve the avocados and remove the pits. Scoop the flesh into a bowl and add lemon juice, salt, and pepper. Mash the avocado using a fork, leaving it slightly chunky for texture.

          Toast the Bread: In the last 5 minutes of cooking the chickpeas, place the bread slices in the toaster or on a grill to toast until golden brown and crispy.

            Assemble the Toast: Once the chickpeas are done, remove them from the oven. Spread the mashed avocado generously on each slice of toasted bread. Top with the spicy roasted chickpeas.
