Back-to-School Chocolate Zucchini Muffins Bites

1 cup grated zucchini (about 1 medium zucchini)

½ cup all-purpose flour

½ cup whole wheat flour

½ cup unsweetened cocoa powder

1 tsp baking soda

½ tsp baking powder

¼ tsp salt

½ tsp cinnamon

½ cup granulated sugar

¼ cup brown sugar, packed

2 large eggs

¼ cup vegetable oil

¼ cup unsweetened applesauce

1 tsp vanilla extract

½ cup semi-sweet chocolate chips

Optional: 2 tbsp chopped nuts (walnuts or pecans)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or spray with cooking spray.

    Prepare the Zucchini: Grate the zucchini using a box grater and then squeeze out excess moisture using a clean kitchen towel or paper towel. Set aside.

      Combine Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, cocoa powder, baking soda, baking powder, salt, and cinnamon until well combined.

        Mix Sugars and Wet Ingredients: In another bowl, whisk together the granulated sugar, brown sugar, eggs, vegetable oil, applesauce, and vanilla extract until smooth and creamy.

          Combine Wet and Dry: Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Do not overmix.

            Fold in Zucchini and Chocolate Chips: Carefully fold in the grated zucchini and chocolate chips (and nuts if using) until evenly distributed throughout the batter.

              Fill Muffin Tin: Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.

                Bake: Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.

                  Cool: Allow the muffin bites to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
