Bacon Mac and Cheese Bites

2 cups elbow macaroni

4 slices of bacon, chopped

2 tablespoons butter

2 tablespoons all-purpose flour

2 cups milk

2 cups shredded sharp cheddar cheese

1/2 cup grated parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup breadcrumbs (panko preferred)

Cooking spray or additional butter for greasing

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package directions until al dente. Drain the pasta and set aside.

    Cook the Bacon: In a medium skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon with a slotted spoon and place on a paper towel to drain. Reserve about 1 tablespoon of the bacon grease in the skillet.

      Make the Cheese Sauce: In the same skillet with the reserved bacon grease, melt the butter over medium heat. Stir in the flour, whisking constantly for about 1 minute to create a roux. Gradually whisk in the milk and continue stirring until the mixture thickens, around 5 minutes.

        Add the Cheese: Remove the skillet from heat and stir in the shredded cheddar cheese, grated parmesan, garlic powder, onion powder, smoked paprika, and add salt and pepper to taste. Mix until the cheese is fully melted and the sauce is smooth.

          Combine Pasta and Bacon: Add the cooked macaroni and crispy bacon to the cheese sauce, mixing well to ensure all the pasta is coated.

            Form the Bites: Preheat your oven to 375°F (190°C). Grease a mini muffin tin with cooking spray or butter. Using a tablespoon, scoop the mac and cheese mixture into each muffin cup, pressing down gently to compress.

              Coating: In a shallow bowl, place the breadcrumbs. Carefully roll each filled muffin cup directly in or top with additional breadcrumbs to create a crunchy topping.

                Bake: Place the muffin tin in the preheated oven and bake for about 15-20 minutes, or until the bites are golden and crispy on top.

                  Cool and Serve: Once baked, allow the bacon mac and cheese bites to cool in the tin for about 5 minutes. Gently remove them using a fork or knife, and serve warm, perhaps with a side of ranch or your favorite dipping sauce.
