For the Bacon-Wrapped Chicken:

4 boneless, skinless chicken breasts

8 slices of thick-cut bacon

1 cup shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh thyme leaves (for garnish)

For the Balsamic Squash:

2 medium zucchinis, cut into half-moon slices

2 medium yellow squash, cut into half-moon slices

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon dried oregano

Salt and pepper to taste

1 tablespoon honey (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chicken: In a bowl, mix the garlic powder, smoked paprika, salt, and pepper. Season the chicken breasts evenly on both sides with the spice mixture.

      Stuff the Chicken: Place ¼ cup of shredded mozzarella on each chicken breast. Roll up each breast tightly and wrap it with two slices of bacon, securing the ends with toothpicks if necessary.

        Sear the Chicken: In a large skillet over medium-high heat, add a splash of olive oil. Sear the bacon-wrapped chicken on all sides until the bacon is crispy and browned (about 3-4 minutes each side).

          Bake the Chicken: Transfer the seared chicken to a baking dish and place it in the preheated oven. Bake for 20-25 minutes or until the internal temperature of the chicken reaches 165°F (75°C).

            Prepare the Balsamic Squash: While the chicken is baking, toss the sliced zucchinis and yellow squash in a mixing bowl with olive oil, balsamic vinegar, oregano, salt, pepper, and honey (if using).

              Roast the Squash: Spread the seasoned squash mixture onto a baking sheet lined with parchment paper. Roast in the oven (you can do this at the same time as the chicken) for 15-20 minutes, or until tender and slightly caramelized, stirring halfway through.
