Ingredients

1 sheet of puff pastry (thawed)

1 small wheel of Brie cheese (approx. 8 oz)

1/2 cup cranberry sauce (homemade or store-bought)

1/4 cup chopped walnuts or pecans (optional)

1 egg (beaten, for egg wash)

Fresh rosemary or thyme (for garnish)

Flour (for dusting)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry to smooth out creases. Cut the pastry into squares, about 3 inches by 3 inches.

Assemble the Bites: Place a square of puff pastry on the prepared baking sheet. Cut the Brie into smaller pieces (approximately 1 oz each) and place one piece in the center of each pastry square. Spoon 1 tablespoon of cranberry sauce over the Brie, and sprinkle a few chopped walnuts or pecans on top if using.

Fold the Pastry: Gently fold up the corners of the pastry square to enclose the cheese and cranberry, pinching the edges together to seal. Repeat with the remaining pastry squares.

Egg Wash: Brush the tops of each pastry bite with the beaten egg to achieve a golden brown color when baked.

Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the pastry is golden and puffed.

Garnish and Serve: Remove from the oven and allow to cool slightly. Garnish each bite with small sprigs of fresh rosemary or thyme. Serve warm.
