Ingredients

1 lb ground chicken

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped green onions

1 egg, beaten

1/4 cup buffalo sauce (plus extra for drizzling)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika

Fresh parsley, for garnish (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Mix Ingredients: In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan, chopped green onions, beaten egg, 1/4 cup buffalo sauce, garlic powder, onion powder, salt, black pepper, and smoked paprika. Mix until all ingredients are evenly integrated.

Form Meatballs: Using your hands, form the mixture into meatballs, about 1-1.5 inches in diameter. Place each meatball on the prepared baking sheet, keeping them spaced about an inch apart.

Bake the Meatballs: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the meatballs are cooked through and golden brown on the outside. Use a meat thermometer to ensure they reach an internal temperature of 165°F (75°C).

Buffalo Sauce Glaze: During the last 5 minutes of baking, drizzle extra buffalo sauce over the meatballs for added flavor.

Serve: Once done, remove from the oven and let cool for a few minutes. Garnish with fresh parsley if desired, and serve warm with your choice of dipping sauce (ranch or blue cheese dressing are great choices!).
