Baked Chicken Parm Meatball Subs

1 lb ground chicken

1/2 cup breadcrumbs (preferably Italian style)

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 tsp dried oregano

1 tsp dried basil

1/2 tsp salt

1/4 tsp black pepper

1 cup marinara sauce (plus extra for serving)

1 1/2 cups shredded mozzarella cheese

4 sub sandwich rolls

Fresh basil leaves (for garnish)

Olive oil (for drizzling)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Make Meatballs: In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, oregano, basil, salt, and pepper. Mix until all ingredients are well incorporated.

      Shape Meatballs: Form the mixture into meatballs, about 1.5 inches in diameter. You should have approximately 12 meatballs.

        Bake Meatballs: Place the meatballs onto the prepared baking sheet and drizzle with a little olive oil. Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and golden brown.

          Prepare Marinara: While the meatballs are baking, warm the marinara sauce in a small saucepan over low heat.

            Assemble Subs: Once the meatballs are done, place them in the sauce and gently toss to coat. Cut the sub rolls down the middle without going all the way through, creating a pocket.

              Layer Ingredients: Place three meatballs into each sub roll. Spoon additional marinara sauce over the meatballs, then generously top with shredded mozzarella cheese.

                Broil: Carefully transfer the assembled subs to the baking sheet. Broil in the oven for 2-3 minutes until the cheese is melted and bubbly. Keep a close eye to prevent burning.

                  Garnish & Serve: Remove from the oven, and add fresh basil leaves on top for garnish. Serve hot with extra marinara sauce on the side for dipping.
