Baked Chicken Taquitos with Salsa Verde

2 cups cooked shredded chicken (rotisserie chicken works great!)

1 cup salsa verde

1 cup shredded cheese (cheddar or Monterey Jack)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

½ teaspoon smoked paprika

Salt and pepper to taste

12 small corn tortillas

Cooking spray or olive oil

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Filling: In a mixing bowl, combine the shredded chicken, salsa verde, shredded cheese, garlic powder, onion powder, cumin, smoked paprika, salt, and pepper. Mix until all ingredients are evenly combined.

      Soften the Tortillas: To make the tortillas pliable, wrap them in a damp paper towel and microwave for about 30 seconds, or heat them individually in a skillet over low heat for about 10 seconds on each side.

        Fill the Taquitos: Lay a tortilla on a flat surface, and place about 2 tablespoons of the chicken filling towards one edge of the tortilla. Tightly roll the tortilla over the filling, using a little pressure to ensure it stays closed. Place the taquito seam-side down on the baking sheet. Repeat until all the filling is used.

          Bake the Taquitos: Spray the tops of the taquitos lightly with cooking spray or brush with olive oil. Bake in the preheated oven for 15-20 minutes, or until the taquitos are golden brown and crispy.

            Serve: Remove from the oven and let cool slightly. Serve your taquitos warm, garnished with fresh cilantro and lime wedges on the side. Enjoy with additional salsa verde for dipping!
