6 large eggs

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1 cup fresh spinach, chopped

1/2 cup bell pepper, diced (any color)

1/4 cup red onion, finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or olive oil for greasing the muffin tin

Optional toppings: chopped herbs (such as chives or parsley), hot sauce, or diced avocado

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or a light coat of olive oil.

    Prepare the Filling: In a large mixing bowl, whisk together the eggs, salt, black pepper, and garlic powder until well beaten. Stir in the shredded cheese, chopped spinach, diced bell pepper, and red onion until evenly combined.

      Fill the Muffin Tin: Pour the egg mixture evenly into the prepared muffin tins, filling each cup about 3/4 full. Leave a little space at the top to prevent overflow during baking.

        Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg cups are set and slightly golden. A toothpick inserted into the center should come out clean.
