Baked Feta and Spinach Stuffed Shells

12 large pasta shells

1 cup fresh spinach, chopped

1 cup feta cheese, crumbled

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1/2 teaspoon dried oregano

Salt and pepper to taste

2 cups marinara sauce

1 tablespoon olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta Shells: In a large pot of boiling salted water, cook the pasta shells according to package instructions until al dente. Drain and set aside to cool slightly.

      Make the Filling: In a mixing bowl, combine the chopped spinach, feta cheese, ricotta cheese, grated Parmesan cheese, minced garlic, red pepper flakes (if using), dried oregano, and a pinch of salt and pepper. Mix until thoroughly combined.

        Stuff the Shells: Carefully fill each cooked pasta shell with a generous spoonful of the feta and spinach mixture.

          Prepare the Baking Dish: Spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish. Arrange the stuffed shells upright in a single layer in the dish, then pour the remaining marinara sauce evenly over the top of the shells. Drizzle with olive oil.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, until the sauce is bubbly and the tops of the shells are slightly golden.

              Garnish and Serve: Once baked, remove from the oven and let rest for a few minutes. Garnish with fresh basil leaves, if desired, before serving.
