Baked Lemon Herb Salmon with Asparagus

Ingredients
  

4 salmon fillets (6 oz each)

1 bunch of asparagus, trimmed

3 tablespoons olive oil, divided

2 tablespoons fresh lemon juice

Zest of 1 lemon

3 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon fresh parsley, chopped

1 teaspoon salt

½ teaspoon black pepper

Lemon slices for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a small bowl, whisk together 2 tablespoons of olive oil, lemon juice, lemon zest, minced garlic, dill, parsley, salt, and black pepper.

      Marinate the Salmon: Place the salmon fillets in a shallow dish and pour the marinade over them. Allow them to marinate for at least 15-20 minutes while you prepare the asparagus.

        Prepare the Asparagus: On a baking sheet, lay out the trimmed asparagus. Drizzle with the remaining tablespoon of olive oil and season with a pinch of salt and pepper. Toss to coat.

          Arrange the Salmon: After marinating, push the asparagus to one side of the baking sheet and place the salmon fillets on the other side, skin side down.

            Bake: Transfer the baking sheet to your preheated oven and bake for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.
