Baked Mac & Cheese with Crunchy Topping

8 oz elbow macaroni

4 cups sharp cheddar cheese, grated

1 cup mozzarella cheese, grated

½ cup Parmesan cheese, grated

4 tablespoons unsalted butter

1/4 cup all-purpose flour

3 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon mustard powder

Salt and pepper, to taste

1 cup panko breadcrumbs

2 tablespoons olive oil

1/2 teaspoon smoked paprika

Fresh parsley, chopped for garnish (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.

    Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

      Prepare the Cheese Sauce: In a medium saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for 1-2 minutes, stirring constantly until the mixture is bubbly and golden.

        Add Milk and Spices: Gradually whisk in the whole milk, ensuring there are no lumps. Continue to cook until the mixture thickens, about 5-7 minutes. Stir in the garlic powder, onion powder, mustard powder, salt, and pepper.

          Incorporate Cheese: Remove the saucepan from heat and add sharp cheddar, mozzarella, and half of the Parmesan cheese to the sauce. Stir until the cheese is completely melted and the sauce is creamy.

            Combine Pasta and Sauce: In a large mixing bowl, combine the cooked pasta with the cheese sauce until evenly coated.

              Make the Crunchy Topping: In a small bowl, mix panko breadcrumbs with olive oil, smoked paprika, and the remaining Parmesan cheese. Stir until the breadcrumbs are evenly coated.

                Assemble the Dish: Pour the mac and cheese mixture into the prepared baking dish and spread it out evenly. Sprinkle the crunchy topping mixture evenly over the mac and cheese.
