Baked Turkey Meatballs with Lemon Yogurt Dip

For the Turkey Meatballs:

1 pound ground turkey

1/2 cup breadcrumbs (panko for extra crunch)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 clove garlic, minced

1 egg

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil (for drizzling)

For the Lemon Yogurt Dip:

1 cup plain Greek yogurt

1 tablespoon fresh lemon juice

Zest of 1 lemon

1 teaspoon honey (optional for sweetness)

Pinch of salt

Fresh dill or mint for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Prepare the Meatball Mixture: In a large mixing bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, parsley, minced garlic, egg, Italian seasoning, salt, and pepper. Mix until just combined, being careful not to overmix.

      Shape the Meatballs: Using your hands, form the mixture into meatballs about 1 to 1.5 inches in diameter. Place the meatballs on the prepared baking sheet, spacing them about an inch apart.

        Drizzle with Olive Oil: Lightly drizzle the meatballs with olive oil to help them brown during baking.

          Bake the Meatballs: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the meatballs are cooked through and reach an internal temperature of 165°F (74°C).
