1 cup carrots, finely grated

1 cup yellow squash, finely grated

1 cup cauliflower, finely grated

2 cups breadcrumbs (preferably whole wheat or panko for extra crunch)

1 cup grated Parmesan cheese

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon dried oregano

½ teaspoon salt

¼ teaspoon black pepper

¼ cup chopped fresh parsley (optional, for garnish)

Preheat the Oven: Start by preheating your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Vegetables: In a large mixing bowl, combine the grated zucchini, carrots, yellow squash, and cauliflower. Use a clean kitchen towel to squeeze out any excess moisture from the grated vegetables to ensure your discs are crispy.
