Balsamic–Glazed Pork Tenderloin

1.5 pounds pork tenderloin

1 cup balsamic vinegar

1/4 cup honey

2 tablespoons Dijon mustard

3 cloves garlic, minced

1 teaspoon fresh rosemary, finely chopped (or 1/2 teaspoon dried)

1 teaspoon fresh thyme, finely chopped (or 1/2 teaspoon dried)

Salt and black pepper, to taste

2 tablespoons olive oil

1 tablespoon butter

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Marinade: In a medium bowl, whisk together the balsamic vinegar, honey, Dijon mustard, minced garlic, rosemary, thyme, salt, and pepper until well combined.

    Marinate the Pork: Place the pork tenderloin in a resealable plastic bag or shallow dish. Pour the marinade over the pork, ensuring it's completely coated. Seal the bag or cover the dish, and marinate in the refrigerator for at least 1 hour (up to overnight for more flavor).

      Preheat the Oven: When ready to cook, preheat your oven to 400°F (200°C).

        Sear the Pork: In a large oven-safe skillet, heat the olive oil over medium-high heat. Remove the pork from the marinade (reserve the marinade) and pat it dry with paper towels. Season the pork with additional salt and pepper if desired. Sear the pork for about 3-4 minutes on each side until golden brown.

          Add the Marinade: After searing, pour the reserved marinade over the pork. Bring to a simmer, then reduce the heat to low.

            Roast the Pork: Transfer the skillet to the preheated oven and roast for about 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
