2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

1 cup fresh strawberries, hulled and sliced

1/4 cup balsamic vinegar

2 tablespoons honey

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon garlic, minced

1/4 cup crumbled feta cheese (optional)

Fresh basil for garnish (optional)

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Make the Balsamic Sauce: In the same skillet, add the sliced strawberries, balsamic vinegar, honey, thyme, and minced garlic. Cook for about 3-4 minutes, stirring gently, until the strawberries have softened and the sauce has thickened slightly.

        Combine Chicken and Sauce: Return the cooked chicken to the skillet, spooning the balsamic-strawberry sauce over the top. Cook for an additional 2 minutes on low heat to allow the flavors to meld.
