2 ripe bananas, mashed

1 cup rolled oats

1 cup almond milk (or any milk of choice)

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

1/4 tsp salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup dark chocolate chips (optional)

Instructions
 

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

    In a large mixing bowl, mash the ripe bananas until smooth. Add the rolled oats, almond milk, honey (or maple syrup), melted coconut oil, and vanilla extract. Stir until well combined.

      In a separate bowl, combine the dry ingredients: baking powder, baking soda, ground cinnamon, and salt. Mix these dry ingredients until evenly distributed.

        Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Be careful not to overmix.

          If using, fold in the chopped walnuts or pecans and dark chocolate chips for added flavor and texture.

            Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.

              Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

                Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy them warm or at room temperature!
