Ingredients

For the Banana Cake:

3 ripe bananas, mashed

1/2 cup (115g) unsalted butter, softened

1 cup (200g) granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups (190g) all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 cup (60ml) buttermilk

For the Cream Cheese Frosting:

8 oz (226g) cream cheese, softened

1/2 cup (115g) unsalted butter, softened

4 cups (480g) powdered sugar

1 teaspoon vanilla extract

1-2 tablespoons milk (as needed for consistency)

Optional Garnish:

Chopped walnuts or pecans

Additional banana slices

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Make the Banana Mixture: In a large mixing bowl, combine the mashed bananas, softened butter, and granulated sugar. Mix well until creamy and smooth.

Add Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract. Mix until fully incorporated.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the banana mixture, alternating with the buttermilk. Start with the flour mixture, then buttermilk, mixing until just combined.

Bake the Cakes: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Prepare the Cream Cheese Frosting: While the cakes are cooling, beat the softened cream cheese and butter together in a medium mixing bowl until smooth and creamy. Gradually add the powdered sugar and mix until smooth. Stir in the vanilla extract. If the frosting is too thick, add milk a little at a time until the desired consistency is reached.

Frost the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of cream cheese frosting on top. Place the second layer on top and frost the top and sides of the entire cake.

Garnish (Optional): For an added crunch and flavor, sprinkle chopped walnuts or pecans on top and garnish with banana slices if desired.

Serve and Enjoy: Slice the cake and serve it up to friends or family to enjoy the delightful combination of banana and cream cheese.
