Ingredients

1 pound cooked brisket, shredded or sliced

1 cup BBQ sauce (your favorite brand or homemade)

4 large hoagie rolls or crusty bread

2 cups shredded mozzarella cheese

1 cup caramelized onions (about 1 large onion)

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley, finely chopped (for garnish)

Instructions

Prepare the Caramelized Onions:

Heat olive oil in a skillet over medium heat. Add the sliced onion and cook, stirring occasionally, for about 15-20 minutes until they become soft, golden brown, and caramelized. Season with salt and pepper to taste. Set aside.

Mix the Brisket and BBQ Sauce:

In a large bowl, combine the shredded brisket and BBQ sauce, mixing well to ensure the brisket is evenly coated.

          Preheat the Oven:

Preheat your oven to 375°F (190°C) for toasting the melts.

              Assemble the Melts:

Slice the hoagie rolls in half lengthwise, leaving one side intact (like a book). On the bottom half of each roll, layer the BBQ brisket mixture generously. Follow this with a portion of caramelized onions and then sprinkle with shredded mozzarella cheese.

                  Toast the Melts:

Place the assembled hoagie rolls on a baking sheet lined with parchment paper. Bake in the preheated oven for 10-12 minutes, or until the cheese is bubbly and golden brown.

                      Serve:

Remove from the oven and let cool for a minute. Garnish with fresh parsley before serving. Enjoy your BBQ brisket melts hot for maximum flavor!
