BBQ Chicken Sweet Potato Bites

2 medium sweet potatoes, peeled and cut into 1-inch cubes

1 pound cooked chicken, shredded (rotisserie chicken works well)

1 cup BBQ sauce (your favorite brand or homemade)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup shredded cheddar cheese

¼ cup green onions, sliced (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Sweet Potatoes: In a large bowl, toss the cubed sweet potatoes with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper until evenly coated.

      Roast the Sweet Potatoes: Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, or until they are tender and slightly caramelized, tossing them halfway through for even cooking.

        Mix Chicken and BBQ Sauce: While the sweet potatoes are roasting, combine the shredded chicken with the BBQ sauce in a bowl, mixing until the chicken is thoroughly coated.

          Assemble the Bites: Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes. On a serving platter or another baking sheet, take each sweet potato cube and make a small indentation on top (you can use the back of a spoon). Spoon a small amount of the BBQ chicken mixture into the indentation of each sweet potato.

            Add Cheese and Bake: Sprinkle shredded cheddar cheese on top of each BBQ chicken-filled sweet potato bite. Return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

              Garnish and Serve: Remove from the oven, let them cool slightly, and garnish with sliced green onions before serving.
