1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

2 tablespoons smoked paprika

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon cayenne pepper (adjust for heat preference)

Salt and pepper to taste

1 cup corn (fresh, frozen, or canned)

1 red bell pepper, diced

1 avocado, diced

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 tablespoon lime juice

8 small corn or flour tortillas

Optional toppings: diced jalapeños, sliced radishes, vegan sour cream, or cheese

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chickpeas: On a baking sheet, combine the chickpeas, olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Toss to coat the chickpeas evenly.
