Ingredients

For the Pulled Chicken:

2 lbs boneless, skinless chicken thighs

1 cup barbecue sauce (your favorite brand or homemade)

1 tbsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

1 tsp salt

1/2 tsp black pepper

1/2 cup chicken broth

1 tbsp olive oil

For the Sliders:

12 small slider buns

1 cup coleslaw (store-bought or homemade)

Pickled jalapeños (optional, for a spicy kick)

Fresh cilantro or parsley, for garnish

Instructions

Prep the Chicken: In a large bowl, mix together the smoked paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken thighs and toss until they are well-coated with the spice mixture.

Sear the Chicken: In a large skillet or pot, heat the olive oil over medium-high heat. Add the seasoned chicken thighs and sear for about 3-4 minutes on each side, until they are golden brown.

Cook the Chicken: Once the chicken is seared, pour in the chicken broth and barbecue sauce. Bring the mixture to a simmer, then cover the pot and reduce the heat to low. Let the chicken cook for about 20-25 minutes, or until the chicken is cooked through and tender.

Shred the Chicken: Remove the chicken from the pot and place it on a cutting board. Use two forks to shred the chicken into bite-sized pieces. Return the shredded chicken to the pot with the barbecue sauce and stir well to coat. Allow it to cook for an additional 5 minutes to absorb the flavors.

Assemble the Sliders: Slice the slider buns in half. On the bottom half of each bun, pile a generous amount of the pulled chicken mixture. Top with coleslaw and, if desired, pickled jalapeños for extra spice. Place the top half of the bun on each slider.

Serve: Arrange the sliders on a platter, garnish with fresh cilantro or parsley, and serve immediately. Enjoy your deliciously smoky, savory, and slightly sweet BBQ pulled chicken sliders!
