1 lb ground beef

1 cup sliced mushrooms (button or cremini)

1 medium onion, diced

2 cloves garlic, minced

2 cups frozen mixed vegetables (peas, corn, carrots)

1 can (10.5 oz) cream of mushroom soup

1 cup beef broth

1 tsp Worcestershire sauce

1 tsp dried thyme

1 tsp dried parsley

Salt and pepper to taste

2 cups cooked egg noodles or mashed potatoes (for topping)

1 cup shredded cheddar cheese (optional)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C).

    Cook the beef: In a large skillet over medium heat, brown the ground beef. Break it up with a spatula as it cooks. Once browned, drain excess grease if necessary.

      Add aromatics: Add in the diced onion and minced garlic to the skillet with the beef, cooking for about 3-4 minutes until the onions become translucent.

        Incorporate mushrooms and vegetables: Stir in the sliced mushrooms and cook for another 5 minutes. Then add the frozen mixed vegetables and cook just until they're warmed through.

          Make the saucy mix: In a separate bowl, combine the cream of mushroom soup, beef broth, Worcestershire sauce, dried thyme, dried parsley, salt, and pepper. Mix well.

            Combine everything: Pour the soup mixture over the beef and vegetable mixture in the skillet, stirring to combine everything evenly. Cook together for another 2-3 minutes to meld the flavors.

              Assemble the casserole: Transfer the beef and mushroom mixture into a greased 9x13 inch baking dish. Spread the cooked egg noodles or mashed potatoes evenly on top.

                Add cheese (optional): If desired, sprinkle shredded cheddar cheese over the top for an extra layer of flavor.

                  Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes until the top is golden and bubbly.
