Ingredients

1 pound boneless, skinless chicken thighs (or breasts)

1/4 cup soy sauce (low sodium preferred)

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon cornstarch (optional for crispy texture)

1 green onion, chopped (for garnish)

Sesame seeds (for garnish)

Optional: steamed rice and steamed vegetables (for serving)

Instructions

Prepare the Marinade: In a medium bowl, whisk together the soy sauce, honey or maple syrup, rice vinegar, sesame oil, minced garlic, and grated ginger. This will be the teriyaki marinade.

Marinate the Chicken: Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the teriyaki marinade over the chicken, ensuring it’s thoroughly coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, ideally 1-2 hours for more flavor.

Heat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

Prepare for Air Frying: If you prefer extra crispiness, sprinkle the cornstarch over the marinated chicken and toss to coat evenly. This step is optional but adds a nice crunch.

Air Fry the Chicken: Place the marinated chicken pieces in the air fryer basket in a single layer. Cook them for 10-12 minutes, flipping halfway through, until the internal temperature reaches 165°F (75°C) and the chicken is beautifully caramelized.

Make the Saucy Finish: If there’s extra marinade left, transfer it to a small saucepan. Bring it to a simmer over medium heat and let it reduce for about 5-7 minutes, stirring frequently until it thickens slightly.

Serve: Once the chicken is done, let it rest for a couple of minutes. Slice it if desired, and drizzle with the reduced teriyaki sauce. Garnish with chopped green onions and sesame seeds. Serve with steamed rice and vegetables, if desired.
