Black Bean and Cheese Stuffed Sweet Potatoes

4 medium sweet potatoes

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup shredded cheddar cheese (or a vegan alternative)

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt (or to taste)

¼ teaspoon black pepper

1 avocado, diced

¼ cup fresh cilantro, chopped

Lime wedges for serving

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: Wash the sweet potatoes thoroughly, then poke several holes in each potato with a fork. This allows steam to escape while cooking. Place the potatoes directly on the oven rack or on a baking sheet and roast for about 45-60 minutes, or until they are tender when pierced with a fork.

      Prepare the Filling: While the sweet potatoes are roasting, in a medium bowl, combine the black beans, corn, half of the shredded cheese, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix until all ingredients are well incorporated.

        Stuff the Potatoes: Once the sweet potatoes are done, carefully remove them from the oven and let them cool slightly. Cut a lengthwise slit down the center of each sweet potato, being careful not to cut all the way through. Gently squeeze the ends to open them up a bit.

          Add the Filling: Spoon a generous amount of the black bean and cheese mixture into each sweet potato. Top each with the remaining shredded cheese.

            Melt the Cheese: Return the stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
