1 large head of cauliflower, cut into small florets

4 slices of bacon, cooked until crispy and crumbled

1 cup cherry tomatoes, halved

1 avocado, diced

½ cup cucumber, diced

¼ cup red onion, finely chopped

½ cup mayonnaise

2 tablespoons sour cream

1 tablespoon apple cider vinegar

1 teaspoon Dijon mustard

Salt and black pepper to taste

2 tablespoons fresh parsley or chives, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Roast the Cauliflower: In a large bowl, toss the cauliflower florets with olive oil, salt, and black pepper until evenly coated. Spread the cauliflower on the prepared baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until golden and tender, stirring halfway through for even cooking. Remove and let cool.

      Prepare the Dressing: In a medium bowl, whisk together mayonnaise, sour cream, apple cider vinegar, Dijon mustard, salt, and black pepper until smooth and well combined.

        Combine Ingredients: In a large mixing bowl, combine the roasted cauliflower, crumbled bacon, cherry tomatoes, diced avocado, cucumber, and red onion. Pour the dressing over the salad and gently toss to ensure all ingredients are well coated.

          Garnish and Serve: Sprinkle fresh parsley or chives on top for garnish. Serve immediately or refrigerate for about 30 minutes to let the flavors meld.
