Ingredients

2 cups all-purpose flour

2 tablespoons sugar

2 teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

2 large eggs

2 cups buttermilk

½ cup unsalted butter, melted

1 teaspoon vanilla extract

2 cups fresh or frozen blueberries (if using frozen, do not thaw)

Powdered sugar for dusting (optional)

Maple syrup for serving

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter or non-stick cooking spray.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Combine Wet Ingredients: In another bowl, beat the eggs, then add the buttermilk, melted butter, and vanilla extract. Whisk until smooth.

Combine Mixtures: Pour the wet ingredients into the bowl of dry ingredients. Gently mix until just combined; be careful not to overmix, as this can make the pancakes tough.

Add Blueberries: Fold in the blueberries, gently mixing to distribute them evenly through the batter.

Bake the Casserole: Pour the pancake batter into the prepared baking dish, spreading it evenly. Bake in the preheated oven for about 25-30 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.

Cool and Slice: Once baked, allow the casserole to cool for about 10 minutes. Cut into squares and dust with powdered sugar if desired.

Serve: Serve warm with maple syrup drizzled on top and an extra handful of fresh blueberries.
