Blueberry Lemon Bars

For the Crust:

1 cup all-purpose flour

1/2 cup unsalted butter, softened

1/4 cup granulated sugar

1/4 teaspoon salt

Zest of 1 lemon

For the Lemon Blueberry Filling:

2 large eggs

1 cup granulated sugar

1/4 cup freshly squeezed lemon juice (about 2 lemons)

1/4 cup all-purpose flour

1 teaspoon baking powder

1 cup fresh blueberries (or frozen, if needed)

Powdered sugar for dusting (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish or line it with parchment paper, leaving an overhang for easy lifting.

    Make the Crust: In a medium bowl, combine 1 cup of flour, softened butter, sugar, salt, and lemon zest. Use a fork or pastry cutter to blend until the mixture resembles coarse crumbs. Press this mixture evenly into the bottom of the prepared baking dish. Bake for 15-20 minutes, or until lightly golden around the edges. Allow to cool slightly.

      Prepare the Filling: In a large bowl, whisk together the eggs, sugar, lemon juice, flour, and baking powder until well combined and smooth.

        Add Blueberries: Gently fold in the blueberries, taking care not to break them.

          Combine Layers: Pour the lemon blueberry filling over the cooled crust, spreading it evenly.
