4 large flour tortillas

6 large eggs

1/2 cup milk

1 cup shredded cheddar cheese

1 cup cooked and crumbled chorizo (or sausage)

1/2 cup diced bell peppers (mixed colors)

1/2 cup diced onions

1 avocado, sliced

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

Hot sauce (optional)

Prepare the Filling: In a large skillet over medium heat, add the diced onions and bell peppers. Sauté for about 3-4 minutes until the vegetables are tender. Add the chorizo (or sausage) and cook until heated through, approximately 5 minutes. Remove from heat and set aside.

    Whisk the Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper until well combined. Pour this mixture into the same skillet and cook over medium-low heat. Stir gently with a spatula until the eggs are softly scrambled and slightly runny. Remove from heat.

      Mix in Cheese and Veggies: Fold the sautéed vegetables and chorizo into the scrambled eggs. Add 3/4 cup of shredded cheddar cheese and mix until well combined.

        Assemble the Burritos: Heat the flour tortillas in a pan or microwave until warm and pliable. Evenly distribute the egg mixture among the tortillas. Top each with slices of avocado, remaining cheese, and chopped cilantro.

          Roll the Burritos: Fold in the sides of each tortilla, then roll from the bottom up to create a tight burrito.

            Final Touch (Optional): If desired, return the burritos to the skillet seam-side down and cook for an additional 1-2 minutes until they are golden brown and crisp.
