1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 small onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

¼ teaspoon cayenne pepper (adjust for heat preference)

Salt and pepper to taste

4 large eggs

Fresh cilantro, chopped (for garnish)

Avocado, sliced (for serving)

Crumbled feta cheese (optional, for serving)

Tortilla chips (optional, for serving)

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper. Sauté for about 5 minutes until the onion is translucent and the pepper is tender. Add minced garlic and sauté for an additional minute until fragrant.

    Add the Beans and Tomatoes: Stir in the black beans, diced tomatoes with green chilies, cumin, smoked paprika, chili powder, cayenne pepper, salt, and pepper. Mix well and let it cook for about 7-10 minutes, allowing the flavors to meld and the chili to thicken slightly.
