2 cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

¼ cup granulated sugar

½ teaspoon salt

½ cup warm milk (110°F/45°C)

¼ cup water (110°F/45°C)

2 large eggs

4 tablespoons unsalted butter, melted

1 cup shredded cheese (cheddar or your choice)

½ cup cooked and crumbled bacon or sausage (optional)

2 tablespoons chopped fresh chives or green onions (optional)

1 egg (for egg wash)

Sesame seeds or poppy seeds (for topping)

Instructions
 

Activate the Yeast: In a small bowl, combine the warm milk, water, and sugar. Sprinkle the yeast on top and let it sit for about 5-10 minutes until frothy.

    Mix the Dough: In a large mixing bowl, whisk together the flour and salt. Make a well in the center and add the activated yeast mixture, melted butter, and eggs. Mix until a dough forms.

      Knead the Dough: On a lightly floured surface, knead the dough for about 5-7 minutes or until it becomes smooth and elastic.

        First Rise: Place the dough in a greased bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 hour, or until it doubles in size.

          Prepare the Filling: While the dough is rising, combine the shredded cheese, crumbled bacon or sausage (if using), and chives or green onions in a bowl. Set aside.

            Shape the Rolls: Once the dough has risen, punch it down and roll it out into a rectangle about ½ inch thick. Cut the dough into squares, approximately 4x4 inches.

              Fill the Rolls: Place a generous spoonful of the cheese mixture in the center of each square. Fold the corners of the dough over the filling and pinch to seal, forming a small roll.

                Second Rise: Place the filled rolls seam-side down on a greased baking sheet. Cover loosely with a clean kitchen towel and let rise for an additional 30 minutes.

                  Preheat the Oven: About 10 minutes before the second rise is complete, preheat your oven to 375°F (190°C).
