Ingredients

4 cups green cabbage, finely shredded

2 cups red cabbage, finely shredded

1 cup carrots, grated

1/2 cup fresh cilantro, chopped

1/2 cup green onions, sliced

1/4 cup lime juice (freshly squeezed)

2 tablespoons honey or agave syrup

1/4 cup olive oil

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1/2 teaspoon cumin (optional for a hint of warmth)

1 jalapeño pepper, seeded and finely diced (optional, for heat)

Instructions

Prepare the Vegetables: In a large mixing bowl, combine the shredded green cabbage, red cabbage, grated carrots, chopped cilantro, and sliced green onions. Toss to mix the vegetables evenly.

Make the Dressing: In a separate small bowl, whisk together the lime juice, honey (or agave syrup), olive oil, salt, black pepper, and cumin (if using). Whisk until fully emulsified to create a smooth dressing.

Combine: Pour the dressing over the cabbage mixture. If you're adding jalapeño for some heat, include it at this time.

Toss and Marinate: Using tongs, gently toss the slaw to coat the vegetables evenly with the dressing. Let the coleslaw sit covered in the refrigerator for at least 30 minutes to allow the flavors to meld together and the vegetables to soften slightly.

Serve: Toss it again before serving. Adjust salt and lime juice to your liking, and enjoy this refreshing slaw on its own, as a side dish, or as a topping for tacos or grilled meats.
